Circa May 11, 1949, the Siamese Country, SIAM, has officially re-name itself, THAILAND, meaning, "land of the free" because it has never been colonized unlike many of its neighboring countries.  With that, the food culture of Thailand has remained consistent with its ancient roots, with flavors and techniques influenced by other countries such as Laos, India, China, and Vietnam.  At the very heart of it all, Thai cuisine keeps it own identity with signature herbs and spices like, Thai Basil, Thai ginger, and lemongrass.  All this and more to infuse the 4 flavors of perfect balance: Salty, Sweet, Sour, & Spicy.
